As one of the founders of Travel Food Couch, my culinary journey began around the age of ten when my dad decided it was time I learned to cook. The only catch? My designated culinary mentor was his girlfriend, whose cooking was legendary for all the wrong reasons. She possessed an uncanny ability to transform meat into shoe leather, reduce vegetables to an unrecognizable mush, and over-salt everything with impressive consistency. The sole beacon of hope in her kitchen repertoire was her exquisite, from-scratch South American hot chocolate—pure bliss in a mug. ☕
One memorable evening, after I had diligently (and perhaps naively) prepared dinner under her guidance, my dad walked through the door. After a hesitant bite of my creation, he paused, looked at me, and inquired, "I thought you were cooking tonight?" I, with the innocent conviction of a child, responded, "I did! She taught me everything!" It was in that moment the realization dawned on me, and I finally understood the weary expression he often wore at dinnertime. 😅
Since then, I've embarked on my own culinary adventures, driven by an insatiable desire to experiment and embrace creativity in the kitchen. My mother's gourmet cooking also provided immense inspiration, shaping my approach to food. 👩🍳
Today, I proudly navigate life as a single mother to a college-aged daughter (Go Beavers!) and share my home with a mischievous orange tabby named Mr. Orange Bean 🐈, who, bless his heart, seems to operate on a single, perpetually busy brain cell.
My ultimate travel destination and number one favorite city is, without a doubt, London. 🇬🇧 I'm utterly captivated by its rich history, the breathtaking garden parks the British are renowned for, the comforting warmth of a traditional English breakfast, and, naturally, their delightful afternoon tea services.
When it comes to food, my heart truly belongs to succulent chicken kabobs 🍢 served alongside fragrant saffron rice, a vibrant medley of fresh vegetables, and a generous dollop of creamy tzatziki sauce.
And a little nugget of wisdom I strive to live by: "There is always a solution to every problem. If there is no solution to the current problem, the solution will appear eventually." ✨
